I'm Steph and I am totally and completely Lactose Intolerant. I haven't always been- in fact I used to LOVE cheese and all things dairy (except milk, I have never liked milk). I first started having problems about 4 months after my 2nd daughter was born. After about a year of feeling ill all the time, numerous visits to my GP and specialists, a few different medications we finally narrowed it down to total and complete lactose intolerance.
Over the past 5 years I have basically had to re-learn how to cook. Cooking and baking dairy free is somewhat different and requires some trial and error. It is definitely a learning curve.
Before being anything else, I am a Mom to three beautiful little girls. Therefore I try to keep many of my recipes kid friendly. You won't find a lot of fancy shmancy gourmet cooking here. What you will find are everyday favorites that dairy free people miss out on, such as Mac and cheese, pizza, lasagna, chocolate chip cookies... I want to keep it real and simple for the most part. A family of 5 lives on a grocery budget and hopefully you will find my recipes and meal ideas to be friendly to your family's budget.
Through this blog I hope to be able to help and share with others who are transitioning from a life of dairy to a life without dairy. And to do it without having to give up your favorite foods, just tweak them a little bit.
